Green Beans Almondine

Vegetables.  I love them.  OK, I know I say I love a lot of things, bacon, chocolate, peanut butter, etc, but I do love vegetables.  There isn’t anything they can’t do.  Soups, salads, entrées and, of course, side dishes.


Vegetables provide that much needed burst of colour on your plate.  I love how you can jazz up a normal vegetable with some spices and olive oil.  All the sudden, they can become the star of the show, enticing people to come back for seconds.

Green Beans are one of my favourites.  They are available all year round so they are pretty versatile.  After making this side dish I am now thinking of getting a French-Style Bean Slicer.  I would then be the envy of all my friends 😉

This recipe is a classic and a keeper for your regular vegetable rotation.

Ingredients:

  • 1 pound fresh green beans
  • 3 cloves minced garlic
  • 1/2 cup sliced almonds
  • 2 tbsp olive oil

Directions:

  1. Wash green beans and cut off ends. Cut to desired length (I left mine whole).  Steam until tender crisp.
  2. Sauté garlic in olive oil.  Add almonds and cook till almonds begin to brown.
  3. Toss in green beans till warmed through.

    These look yummy! I have a tendency to overcook my green beans and they turn to mush. It’s a good tasting mush because I load it with bacon, but mush none the less :). I think I’ll give this a try. I know they must be a lot more healthy than my mush ;).
