Breakfast T.A.B.L.E.

I was wandering around the grocery store when a fabulous idea struck me!  A BLT Breakfast sandwich!!  Now I know what you are thinking, “Connie, you did not invent the BLT Breakfast sandwich.”  I know, I know, they are available at every coffee and doughnut shop in every city, but I saw inspiration when I glanced at a beautiful head of Boston leaf lettuce and from that small glance, a new breakfast was born (at least in our home).

After being side-swiped by the lettuce, I grabbed the rest of the ingredients that I needed for my creation:  Tomatoes, Avocado, Eggs and Bacon.  Well, I had eggs and bacon at home, but you get the idea.

You know that Jamie and I don’t eat a lot of bread, so the idea of a sandwich for us normally consists of using romaine lettuce for leaf wraps.  You are likely thinking that I used the Boston lettuce for a leaf wrap, but you are mistaken my friend 😉  FYI – when I told Jamie that I was going to make him a breakfast sandwich, and he saw the ingredients, his first reaction was that I was going to use the leaf lettuce as a wrap, so you are in good company.

When it came time to prepare breakfast I gathered up my ingredients, and got to work.  I cooked up some bacon (crispy), and I sliced the tomato into thick slices.  From there I cut out a few strips of ripe avocado and tore off some lettuce.

I layered my creation, using the tomato as the bread!  Now, of course, using fresh slices of tomato as ‘bread’ there is no way you can eat this with your hands, it is definitely a knife and fork kind of breakfast.  I topped the first slice of tomato with mayonnaise and bacon, some lettuce, more bacon and some avocado.  I then added another slice of tomato and an over-easy fried egg.

This breakfast creation is very simple, and very delicious!  It tasted like a complete breakfast, minus the bread.  While Jamie and I were discussing our meal (because I love to talk about food all the time), he came up with the great title of Breakfast T.A.B.L.E.  I hadn’t realized it, but all the ingredients I used to make this little sandwich spelled table. (Tomato, Avocado, Bacon, Lettuce, Egg)  Needless to say, I was pretty excited about this discovery 🙂  I give full credit for the name of this dish to Jamie, as he really is my idea’s guy!

Ingredients:

  • 2 thick tomato slices
  • Boston leaf lettuce
  • 2 strips bacon, crispy
  • 2 avocado slices
  • 1 fried egg, over easy
  • 1 tbsp mayonnaise

Directions:

  1. Place one slice of tomato on plate.
  2. Top with tablespoon of mayonnaise.
  3. Layer with bacon and slice of lettuce.
  4. Top lettuce with another slice of cooked bacon, and layer with sliced avocado.
  5. Top with slice of tomato and fried egg.
  6. Enjoy! (will definitely need a knife and fork for this ‘sandwich’) 🙂
