
Even though the first day of spring was over a month ago, I feel like we are still waiting for Mother Nature to wrap her head around the idea that winter is over. We have been enduring crazy temperature swings. Warm one day (no jacket, wearing short sleeves warm) and the next day we wake up to an ice storm.
In trying to keep warm weather thoughts in mind, I decided to whip up a batch of devilish eggs. Nothing says warm summer days like the tastiness of a devilled egg. Who doesn’t love devilled eggs? Little bites of egg salad in a handy edible container of egg. Egg stuffed with more egg = Awesome!

As part of my new year’s quest to re-discover healthier eating patterns, I decided that I need to make more of an effort to have breakfast everyday. I have fallen into a rut of just having a cup of tea or coffee for breakfast, but not eating any food. It causes me to get really hungry in the morning and then I find myself snacking or grazing all the way to lunch time. I know that having a real breakfast is going to be key to getting back on track.

To counter the amount of baked goods I have been posting, I thought it would be a good time to share with you a breakfast recipe using coconut flour.
This comes courtesy of the Make it Paleo cookbook (one of the two that I have not packed away). Do not be deceived by the amount of coconut flour in this recipe. Even though it only calls for a quarter cup of flour, these pancakes are dense. Super dense. It made six pancakes (three each), and I was pretty full after the second one. Don’t worry; I managed to eat the third 😉

Jamie and I are in the middle of getting ready to move. In preparing our kitchen, and my precious cookbook collection, I left out only a few cookbooks and packed away the rest. I was wandering around the grocery store when a fabulous idea struck me! A BLT Breakfast sandwich!! Now I know what you are thinking, “Connie, you did not invent the BLT Breakfast sandwich.” I know, I know, they are available at every coffee and doughnut shop in every city, but I saw inspiration when I glanced at a beautiful head of Boston leaf lettuce and from that small glance, a new breakfast was born (at least in our home).

I have mentioned on previous occasions that we eat a lot of vegetables. Quite often we take raw veggies in our lunch, but by the weekend, the thought of eating another piece of cauliflower or broccoli is not that appealing. (*Note – The exception to this statement is the awesomeness of Cauliflower Pizza) 🙂
Since we are overly familiar with the cauliflower pizza, I wanted to figure out another way to incorporate vegetables into our weekend fare. As I was sitting on the couch, scouring through cookbooks and cooking magazines, it came to me! It was like an epiphany struck me through the open blinds of the living room window. Cauliflower Broccoli Balls! This was going to be amazing.

Everyone has a favourite dessert that they like to order when they are out for dinner. For some it is a rich piece of chocolate cake, covered in layer after layer of thick chocolate icing. For others it is a scrumptious piece of cheesecake, topped with tons of fruit. Well for me, my all time favourite dessert is a creamy and delicious crème brulée.
