
Believe it or not, this recipe does not contain quinoa!
I have been making waffles for years. Although they take a bit more time and prep than making pancakes, I can’t resist the crisp exterior and delicious, fluffy interior of a waffle. Since they take a bit more work to prepare, I find that we only make them a few times a year, but once I have my mind set on waffles, there is no stopping me!

I was able to make it to Costco this past weekend. I haven’t been since before Christmas (October to be completely truthful), and my full cart and bill proved my poor Costco attendance. I don’t buy everything at Costco, but the one thing I love to stock up on while I am there are almonds and pecans.

I cannot be the only one that has more than a few bananas in their freezer. You know what happens; you buy bananas with the best of intentions, and then, by the end of the week, you find you have a couple of bananas that are definitely over ripe sitting on your counter. Maybe you have even encountered a fruit fly or two. Seriously, where do these things come from! So, you do what everyone else does, and throw the bananas in the freezer with thoughts of banana bread and muffins as you shut the freezer door.

I felt the urge to bake this weekend. I guess it is my version of cabin fever. Now that spring is right around the corner I have a burning desire to whip up sweet treats. Or maybe it is because Christmas is so far in my rear-view mirror that I can justify baking again?

With the holiday season in full swing, it is time to think about Christmas baking. I know a lot of people have already started….but the problem I have with starting early, is that Jamie and I raid the freezer of our sweet treats, and we end up having to bake twice as much!

We have been making numerous trips to Havelock and Campbellford this summer to deal with Dad’s Estate. Not exactly how we had planned to spend our summer, but it has allowed us to see Cherie, Dwayne and Sam more than we normally do over the summer. So that is a definite plus!

My favourite muffin to make is Oatmeal Banana Chocolate Chip. I have been making this muffin for years. I change it up from time to time, omitting the chocolate chips for fruit, but let’s admit it, we all want that little bit of chocolate in our muffin to make it feel like a bit of a treat 😉

After making the triple lemon cake for Laurel’s birthday, I have become intrigued with the idea of using jelly powder to flavour cakes. In fact, Kerri flavoured a cake with grape Jell-O and grape Kool-Aid. I was fortunate enough to taste the result of her experiment, and it was delicious. It was a perfect birthday cake for a child’s birthday party.
When I was approached a few weeks ago to make a dessert for a birthday celebration in the office, I knew that I wanted to play around with different flavour combinations. I have done a chocolate, vanilla and lemon cake now I wanted to play around with strawberry. You may think this is an odd choice to celebrate a milestone birthday for a male co-worker, but I can explain…

When I was at the Food Bloggers of Canada Conference in April, not only did I meet Canadian bloggers, but I also met a lot of Canadian Sponsors. One connection I made was with Rachel, a representative from Lentils Canada.
Are you surprised that Canada grows lentils? I was a bit surprised to learn this too. During my conversation with Rachel I learned that lentils can be used in a whole variety of ways, not just soups or chili (which is how I was used to seeing them).

I haven’t been that successful in my eating habits the past few weeks. I have been indulging in chocolate (it just seems to be everywhere in the office), burgers (a lot of burgers) and where there are burgers there are also fries, onion rings, bread and beer. So, yesterday I dedicated a good portion of the day to the kitchen, where I created some Paleo friendly snacks.
In looking at the official definition of granola, I am wondering if this dish can even be called granola, since it doesn’t consist of rolled oats, but I promise you, once you taste it, you won’t miss them. When you see all the nuts, seeds and coconut, rolled oats will be the furthest thing from your mind.
