Spicy Tomato Confit

Cherry tomatoes have to be one of my favourite snack foods. I just love the sweetness of the tomato and they really are adorable. Just little bites of summer.

When I was looking through one of my cookbooks for a new side dish, this recipe appealed to me. Confit Cherry Tomatoes. Now, I am not familiar with confit, in fact, the only time I see this term is when it refers to duck. Since I am not a huge fan of duck, the idea of confit has never really struck me as something I needed to try. But cherry tomatoes, well, I never pass up an opportunity to eat more tomatoes, so I figured it was time the confit made an appearance in our kitchen.

Cabbage Rolls with Tomato Cranberry Sauce

Cabbage Rolls - ready for the oven

I am going to have to admit to you, that I have never made cabbage rolls before. I have enjoyed them on more than one occasion, but I have never attempted to make them myself, till now.

When we were growing up, our Mom would make cabbage rolls a couple of times a year. It was a time consuming task, but we always enjoyed the effort, as there is nothing better than homemade cabbage rolls. Over the years, I have had the frozen variety, but they just don’t compare to homemade.

Spaghetti Squash and Meatballs

Now that autumn is officially here, it is time to embrace the season and start cooking more comfort foods. I don’t that there is anything more comforting than a great dinner of Spaghetti and Meatballs!

With Jamie and I trying to eat healthy (actually we are just trying to balance out all the carbohydrates that we consume through cookies 😉 ), we don’t eat a lot of pasta. However, this year I have been introduced to the wonderful world of spaghetti squash!

Sun-Dried Tomato Hummus

I am back with yet another Hummus recipe 🙂  I still can’t believe that I used to buy this pre-made.  It is so easy to make yourself.  I must have thrown hundreds of dollars away on prepared product.  Yikes!

I was in the grocery store, when I saw a jar of oil-packed sun-dried tomatoes.  The idea struck me to make this into a delicious hummus, and to incorporate some of the oil from the jar of tomatoes into the mix.

Stuffed Tomatoes

Here is another creation inspired by the local Farmers Market. I can’t help but be excited when I see farm fresh field tomatoes. They are so flavourful and delicious. I really could eat them just like an apple, but I think that might get a bit messy 🙂

Jamie and I had purchased some beautiful looking tomatoes and we were looking for another way to use them. Then Jamie came up with the amazing idea of stuffing the tomatoes! I have never done that before. I have heard of stuffed peppers, but never a stuffed tomato. I wasn’t sure if the delicate flesh of the tomato would stand up to being hollowed out, stuffed and baked, but I was willing to try it out.

Salsa Fresca

Jamie and I were at the Farmers Market this past weekend, and my eyes went wide when I saw that farm fresh field tomatoes were available.  I love tomatoes, and when they are in season, I can’t stop myself from indulging in a large variety of tomato treats;
