Oven Roasted Kale Chips

Kale Chips ready for the oven

I confirmed what I had always believed about myself this past month. I am a stress eater. I threw caution into the wind and settled into a December filled with chips, doughnuts and other fried foods. Let’s not forget the countless desserts and copious amounts of bread that I ate either.

But with 2012 behind me and 2013 and an unacceptable scale reading facing me in the mornings, I am getting back on track with more reasonable food choices. So, I thought that the first thing I would share with you is my new potato chip substitute, Kale Chips.

Coconut Flour Pancakes with Berry Reduction

To counter the amount of baked goods I have been posting, I thought it would be a good time to share with you a breakfast recipe using coconut flour.

This comes courtesy of the Make it Paleo cookbook (one of the two that I have not packed away). Do not be deceived by the amount of coconut flour in this recipe. Even though it only calls for a quarter cup of flour, these pancakes are dense. Super dense. It made six pancakes (three each), and I was pretty full after the second one. Don’t worry; I managed to eat the third 😉

Lime Marinated Steak & Grilled Vegetables

In planning for our upcoming move, Jamie and I have taken stock of all of our kitchen appliances and have donated those items that have one use and take up a lot of room in our cupboards. Some examples of items that we no longer own are our electric frying pan, toaster, electric Panini press, indoor grill and flat-topped griddle.

Coconut Macaroons

Jamie and I are in the middle of getting ready to move.  In preparing our kitchen, and my precious cookbook collection, I left out only a few cookbooks and packed away the rest.  What that means, is in the next few weeks be prepared for a spike in recipes from Make it Paleo appearing on Ruby Reduction 🙂

Cauliflower Rice

I think that cauliflower is an amazing vegetable. You know how every time you turn around the media is boasting the benefits of a new super fruit (Açaí Berries, Blueberries, Pomegranates, Pineapple, etc), but rarely do you hear the call of a new super vegetable.

Now, I don’t know if this is because all vegetables have been discovered or that we already know that vegetables are awesome, but I want to throw it out there that cauliflower is our super vegetable of choice.

Breakfast T.A.B.L.E.

I was wandering around the grocery store when a fabulous idea struck me!  A BLT Breakfast sandwich!!  Now I know what you are thinking, “Connie, you did not invent the BLT Breakfast sandwich.”  I know, I know, they are available at every coffee and doughnut shop in every city, but I saw inspiration when I glanced at a beautiful head of Boston leaf lettuce and from that small glance, a new breakfast was born (at least in our home).

Back-to-Basics Butternut Squash Soup

I have previously posted a butternut squash soup recipe, but I recently made a different version, and I thought I would share it with you.

While I was flipping through the Make it Paleo cookbook that Jamie had received, I was surprised by the simplicity of their recipe for butternut squash soup. It called for only butternut squash and onions, along with some spices. When I make soup, I generally put any and all vegetables I can find into it, so I was curious to find out how this basic recipe would taste. I made it my mission to find out.

Spaghetti Squash and Meatballs

Now that autumn is officially here, it is time to embrace the season and start cooking more comfort foods. I don’t that there is anything more comforting than a great dinner of Spaghetti and Meatballs!

With Jamie and I trying to eat healthy (actually we are just trying to balance out all the carbohydrates that we consume through cookies 😉 ), we don’t eat a lot of pasta. However, this year I have been introduced to the wonderful world of spaghetti squash!
