This weekend, the world celebrates Saint Patrick’s Day. In honour of this world-wide event, I thought a *pp was in order. (*pp = potato post)

Roasted Beets with Shallot and Orange Dressing
I have never really thought of eating beets. I normally pass by them in the grocery store. However, one night when I was out for dinner at The Keg, my side seasonal vegetable was roasted beets.
Ice Cream Cone Cupcakes
When my nephew, Sam, comes to Ottawa for a visit, I want to make sure that his visit is filled with yummy treats. While his parents entice him with healthy fare like veggies and chicken, I feel it is my duty as Auntie Connie to present him with fun food options like cookies, cake and ice cream 🙂

Chili Chicken & Peppers
Well, I am back with another super easy chicken recipe 🙂
Chicken is our go-to dish for any night of the week. We grill it (on an indoor grill), bake it, pan fry it, stuff it, or even throw it in the slow cooker. But, as I am sure you can appreciate, when you eat chicken almost daily, you really need to experiment with flavours or else you will get bored.
Bacon Wrapped Almond Stuffed Dates
These are little bites of heaven, and I thought that they would be the perfect recipe to share leading up to Valentine’s Day. You may be asking yourself why, and the answer is simple, I love bacon, so this is kind of like a Valentine’s treat for myself 🙂
Pork Chops with Port and Cherry Sauce (Port Chops)
I don’t prepare pork chops very often. I am a big fan of pork tenderloin, but for some reason I avoid pork chops in the grocery store. As part of my new recipe a week resolution, I thought I would give pork chops another chance.
Spinach Bacon Cheese Balls
A few weeks ago we were over at Kim and Ryan’s for an amazing dinner. Kim surprised Jamie with an über delicious Triple BerryCrumble for his birthday. As part of the menu for the evening, Kim made these delicious Spinach Balls. They were very tasty and we ate them all before dinner was served.
Maple Ginger Glazed Salmon
There are times when you are in the grocery store and you see a frozen item on sale that is a really good buy. It might be an item that you normally don’t purchase frozen, but it seems too good to pass up. This is what happened with a 4 pack of frozen salmon filets. It was a great deal, but, every time I opened up the freezer, I was never interested in preparing them. I just kind of felt like they were taking up valuable space where I could keep additional packages of bacon 🙂 or maybe Tupperware containers filled with excess cookies!
