In planning for our upcoming move, Jamie and I have taken stock of all of our kitchen appliances and have donated those items that have one use and take up a lot of room in our cupboards. Some examples of items that we no longer own are our electric frying pan, toaster, electric Panini press, indoor grill and flat-topped griddle.

Connie Squares
I had mentioned before that Jamie and I are moving and my cookbook collection has been carefully packed away, so besides the internet, the recipes I have at my disposal are from two cookbooks. So here is another one from The Designing Women Plain & Simple Cookbook that Laura recently gave me.
As I was flipping through this book, I was surprised to see a recipe called “Connie Squares“. Well, of course I am going to share this with you, it is almost like destiny 🙂
Cauliflower Rice
I think that cauliflower is an amazing vegetable. You know how every time you turn around the media is boasting the benefits of a new super fruit (Açaí Berries, Blueberries, Pomegranates, Pineapple, etc), but rarely do you hear the call of a new super vegetable.
Now, I don’t know if this is because all vegetables have been discovered or that we already know that vegetables are awesome, but I want to throw it out there that cauliflower is our super vegetable of choice.
Breakfast T.A.B.L.E.
I was wandering around the grocery store when a fabulous idea struck me! A BLT Breakfast sandwich!! Now I know what you are thinking, “Connie, you did not invent the BLT Breakfast sandwich.” I know, I know, they are available at every coffee and doughnut shop in every city, but I saw inspiration when I glanced at a beautiful head of Boston leaf lettuce and from that small glance, a new breakfast was born (at least in our home).
Oven Roasted Pumpkin Seeds
I spent this Saturday taking a cooking course from Le Cordon Bleu. The ingredient du jour was pumpkin and other fall harvest vegetables (spaghetti squash and butternut squash). I was very excited to take this class, as I love cooking with pumpkin.
The class didn’t disappoint! I came home with Béchamel topped ham stuffed with pumpkin and Emmental cheese and spaghetti squash topped with Alfredo sauce. Needless to say, I consumed a lot of cream, cheese and butter this weekend 😉
Blog Post #100
I can’t believe that today represents my 100th blog post! It is crazy to think that I have been doing this for almost a year 🙂
I never imagined that I would enjoy this creative outlet so much. Writing for Ruby Reduction twice a week is the most fun I have ever had writing.
Tilapia Provençale
Jamie and I had the pleasure this summer of stumbling upon a few used book sales. This is a fabulous way to spend a Saturday morning, with your coffee in hand and browsing through well loved books to discover a hidden gem.
