
Now that autumn is officially here, it is time to embrace the season and start cooking more comfort foods. I don’t that there is anything more comforting than a great dinner of Spaghetti and Meatballs!
With Jamie and I trying to eat healthy (actually we are just trying to balance out all the carbohydrates that we consume through cookies 😉 ), we don’t eat a lot of pasta. However, this year I have been introduced to the wonderful world of spaghetti squash!

Anyone who knows me, knows that I absolutely love lemon! I mentioned my obsession with this fruit when I shared with you my first attempt at Lemon Meringue Pie. Now I am back with another lemon inspired recipe – Lemon Coconut Loaf.
I had seen many recipes for lemon loafs, and I wanted to give one a try. What I like about a loaf or a quick bread, is that you don’t have to play around with yeast or kneeding. You just add all your ingredients together, put them in a loaf pan and pop it in the oven. Done and done! 😉

I had a bag of carrots in the fridge that I was supposed to use to make a soup, but I hadn’t gotten around to it yet. I am normally not a big fan of carrots, unless I am using them to dip into homemade hummus. Hmmmm, dipping carrots into hummus, I wonder if I can make carrots into a dip? Of course I can! Anything is possible, especially when you have a large collection of cooking magazines to browse through 🙂

I was at the grocery store, when I saw a bag of fresh peas. Now, I love peas, but usually you can only find them frozen (which are a tasty cold treat if you are ever scouring around for something to snack on and you find your junk food cupboard bare – it is amazing the food we will snack on when hungry!). So, when I found this bag of farm fresh peas, I knew I had to find a recipe that would do them justice.

I don’t think that there is a more perfect flavour combination that chocolate and peanut butter. 🙂
I tasted my first crackle cookie last Christmas. My friend, Kerri had brought them in as her contribution to our office cookie exchange. I was hooked on my first bite, they are absolutely delicious. They taste like a brownie – perfect!

How can you increase the desirability of mashed potatoes? Easy, just add caramelized onions!
As you know, Jamie and I love dining out at The Keg. Not only are their steaks and dirty martini’s perfect, but they also serve up the best mashed potatoes. I have tried on numerous occasions to replicate their potatoes at home, but have always fallen short, until this time.

I am back with yet another Hummus recipe 🙂 I still can’t believe that I used to buy this pre-made. It is so easy to make yourself. I must have thrown hundreds of dollars away on prepared product. Yikes!
I was in the grocery store, when I saw a jar of oil-packed sun-dried tomatoes. The idea struck me to make this into a delicious hummus, and to incorporate some of the oil from the jar of tomatoes into the mix.

I just love it when summer berries are in season. There is nothing better than going to the Farmers Market and seeing baskets of bright, colourful berries. Since this is the berry* last weekend of summer, I thought I would share with you the ultimate summer berry crumble. *I know – that was pretty bad, wasn’t it?!? 🙂
I usually make an apple crumble (or Apple Betty as my Grandma used to call it). It is a very satisfying fall harvest dessert. Fresh apples topped with a delicious topping of rolled oats, cinnamon and brown sugar. Yummy! Earlier this year, we were at our friends Kim and Ryan’s for dinner, and Kim made a gorgeous Triple Berry Crumble with blueberries, raspberries and blackberries. I wanted to attempt to make something similar, so off to my cookbook cupboard I went!

When Cherie gave me her guest post for Gluten Free Black Bean Brownies, it dawned on me that I haven’t shared with you my world famous Black Bean & Corn Salsa Recipe. Now I say world famous, maybe that is a bit of an exaggeration. But, this salsa is quite popular among our friends and co-workers. It is a pot-luck staple that I have been making for over seven years. Everytime I bring this to a party, people want the recipe!

When I read Connie’s post for ‘Chocolate Brownies’, I felt the need to answer her question of “is there any other kind?”
Well of course there are other types of brownies out there and this is, by far the best Black Bean Brownie recipe that I have come across – and trust me, I have tried a few. Some are too dry, some are too wet and some are just too, well, beany. But this was the perfect consistency for a delicious guilt-free brownie treat.
